Caramel Apple Bread

Caramel Apple Bread (or Muffins)

1 cup sugar
2 eggs
8 oz (1 cup) sour cream
2 tsp vanilla
1 1/4 cup chopped, peeled apples
2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup chopped pecans (optional)

For caramel:
1/3 cup butter
1/3 cup brown sugar

Beat sugar, sour cream, vanilla and eggs until combined. then beat for two minutes at higher spped. Add dry ingredients. Beat at low speed till thoroughly combined. Fold in apples and nuts if using. Pour into well greased loaf (or muffin) pan. Bake at 325 to 350 for 50 to 60 minutes, or until toothpick comes out clean. Remove from oven and let cool in pans for 15 min. Turn out on wire rack and cool.
In saucepan, melt butter and brown sugar. Bring to a boil and boil for one minute. Allow to cool for a few minutes then drizzle caramel over top of bread. Allow to cool before cutting.

I tried making this bread muffin style, and it was delicious! I cooked them for 25 minutes, it could probably be shorter. They are a little dryer in muffin form than the bread is, I would add more sour cream or apples if doing it again. Wheat flour works just as good as white and then its delicious and nutritious! :)
